Escabeche, traditionally a way of pickling fresh meat and fish, now more often refers to marinating in white wine vinegar and spices like bay, pepper and garlic. The freshness of the vinegar cuts through the rich flesh of the Sardine producing a snack that’s satisfying yet surprisingly fresh.
